This cake has a wonderfully rich chocolate flavor and a soft, moist texture. It is hearty enough to be a decent breakfast or fancy enough to be a birthday cake.

Ingredients

For the cake:

1 cup whole wheat flour

1 cup all purpose flour

1/4 cup flax seeds

3 TBS cocoa powder

1 tsp baking soda

1 tsp baking powder

2 or 3 TBS brown sugar

5 ripe bananas, mashed thoroughly

2/3 cup plain yogurt

4 TBS vegetable oil

2 TBS vinegar

For the filling:

8 oz cream cheese, softened

3 TBS maple syrup

1 tsp vanilla extract

For the chocolate ganache (optional):

1 bar semi sweet Baker’s Chocolate

1/4 cup milk (microwaved for 30 seconds)

Instructions

To make the cake:

Line the bottoms of two 8-inch round cake tins with parchment paper. Grease the sides of the cake tins.

Mix the wet ingredients.

Add the dry ingredients and mix.

Pour the batter into the two pans.

Bake at 350F for 20 minutes or until a toothpick comes out clean when inserted into the middle of the cake.

Take the cakes out of the pans and let them cool completely.

To make the filling:

Mix all ingredients well.

Spread the filling on one of the cakes and put the other cake on top.

To make the chocolate ganache:

Boil 6 cups of water in a kettle. Pour the water into a large bowl, and put a small bowl with the chocolate inside the bowl of hot water.

Add the hot milk, and mix gradually until the chocolate ganache becomes smooth and glossy.

Spread the chocolate ganache over the top of the cake with a butter knife.
