I remember my mom saying that these fish-shaped buns bring her fond memories from her childhood in Korea. She said that in front of her middle school there were many food trucks that sold warm, freshly cooked fish buns filled with red bean paste. It is very tasty to use applesauce and raisins as a filling too. These buns are wonderful as a snack or even as a dessert. This recipe makes 10 buns.

Ingredients

For the batter:

1 cup all purpose flour

1/3 cup whole wheat flour

1 tsp baking powder

1 TBS brown sugar

2 TBS flax seeds

3 TBS canola oil

2 cups milk

For the filling:

1 cup apple sauce

1/2 cup raisins

1 TBS sugar

1 tsp cinnamon

1 tsp cornstarch

Instructions

To make the batter:

Whisk all dry ingredients.

Add milk and oil and combine well.

To make the filling:

Mix all ingredients.

To cook the buns:

Heat the griddle with the top part down, on medium heat.

When the griddle is hot, wipe the top and bottom surfaces with oil using a small paper towel.

Spoon the batter onto the bottom part to just cover the fish shaped hollow area.

Drop 1 1/2 TBS of filling into the middle of the fish body.

Add some more batter on top of the filling to just cover it and then pull the top part down.

Immediately turn the griddle over to cook the other side of the fish.

Cook, checking frequently until it is nicely browned on both sides, showing the fish scales and fins.
